Who says you cannot indulge in cookie dough while staying on track with your nutrition? This recipe is one of our favourites at Collab Coaching. It is high in protein, genuinely delicious, and takes about five minutes to make. No baking required.
What You Need
This recipe uses simple ingredients you probably already have. The base is chickpeas, combined with nut butter, protein powder, and a few pantry staples to get that authentic cookie dough flavour without the raw egg.
- 1 can (400g) chickpeas, drained and rinsed
- 3 tbsp natural peanut or almond butter
- 2 scoops vanilla protein powder
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract
- Pinch of salt
- 3-4 tbsp milk (any kind) to adjust consistency
- 3-4 tbsp dark chocolate chips
How to Make It
Blend the chickpeas, nut butter, protein powder, sweetener, vanilla, and salt in a food processor until smooth. Add milk one tablespoon at a time until you reach a thick, dough-like consistency. Fold in the chocolate chips and refrigerate for at least 30 minutes before serving.
That is genuinely it. The chickpeas disappear completely. All you get is creamy, sweet, chocolate-studded cookie dough that hits around 25-30g of protein per serving depending on your protein powder.
